Brand-Chef Vladimir Mukhin, Chef Anatoliy Kazakov and sommelier Roman Romanov created a menu where dishes made of Russian products match with wines from Krasnodar Territory, Rostov region and Crimea in the most winning combinations.
Six courses where each dish is accompanied with a glass of wine perform six absolutely different characters. And each service is a perfect duet. Rowdy eskimo made of cep mushrooms with pike caviar and 'nest' made of chicken skin with pate, apple and madeira jelly will perfectly be complemented with immodest sparkling Rose from Abrau Dyurso. Tender scallop with scented Antonovka apple puree, crispy whirls of fresh pumpkin and piercing sea buckthorn sauce is highlighted by bright Pinot Blanc with bold mineral notes from Divnomorskoye Manor. Sweet & cream notes of King crab with millet and Posheknonskiy cheese and Volna cheese sauce will be increased by bio-dynamic riesling from Pavel Shvets and his Uppa Winerry.
You may order the set without wine. Crab with millet, Murmansk halibut with burnt leek stuffed with champignons and Magadan prawns or unusual Tula honey-cake – these are dishes which will sound solo as effectively as in a set.
